Mark J HaasFood Science · Regulation · Exposure

The exposure is usually in the paperwork, not the process.

I write about the intersection of food science, manufacturing, regulation and commercial exposure, including where technically sound companies become vulnerable through classification, documentation and decision-making.

What I write about

Regulatory exposure

Where classifications, filings, labels, claims and records create consequences beyond the underlying science.

Food manufacturing

What technical and operational decisions look like inside actual production environments.

Litigation and enforcement

How routine language, documentation and technical decisions become evidence during disputes, investigations, insurance reviews and enforcement actions.

Technology and compliance

Where software improves regulatory work and where it merely organizes incomplete or poorly reasoned information.

Commercialization and scale-up

How products, processes and technical assumptions change when they move from development into manufacturing.

Technical due diligence

How investors, acquirers, manufacturers and commercial partners should evaluate the technical foundations beneath product and growth claims.

Why the perspective is different

My perspective comes from operating companies, developing products, validating processes and working inside the documentation that regulators, customers, attorneys, insurers and investors eventually examine. I am interested less in what a rule appears to say in isolation than in how technical decisions are made, documented and defended in practice.

Where the work happens

The analysis comes out of active practice

The Helmsman Pilot Plant

Helmsman operates a full service food and beverage pilot plant, including a Sidel Aseptic Lab Unit capable of producing, testing and evaluating new shelf stable products under representative aseptic processing conditions. The system allows products, formulations and processing assumptions to be fully evaluated without tying up a major commercial aseptic processor or committing prematurely to a full scale production run.

The Helmsman Group

The Helmsman Group works across food science, process and packaging validation, commercialization, regulatory strategy and manufacturing execution. This active operating work provides the practical foundation for my analysis of how technical decisions perform outside the laboratory.
